Sudden changes in character. While hot, this tea has a surprising gelatinous texture and a strong pickled vegetable and grain taste. After it had cooled, suddenly the texture had taken on a drying edge, and the aroma shifted more strongly towards grains with a hint of something almost like old perfume. To put it lightly, the complexity and thickness of the texture in this tea caught me off guard!
