It's all about

Airiness. Everything about this tea emphasizes what’s not there, if that makes sense. In place of more standard ham-fisted malty chocolatey black tea notes, there is only a light date aroma and barely-there soft texture. In some teas, this might feel weak and washed out, but here it feels ethereal and spacious. As it cools, however, it’s brought back to earth with a building astringency and strengthening sour flavor. For that reason, this is best drank gong-fu style so it won’t sit around and loose its balance.
